The first wave of troops you send in are spearmen and some pikemen. This will eliminate any wooden pits and may set off some pitch. Next, set up trebuchets and fire ballista to breach the walls. Fire off some cattle first to reduce the enemy peasant level, disabling them of making more troops. Once the archers and crossbowmen are locked onto your swordsmen (you'll need like 300), send in a few dozen laddermen and scale the walls.

Charge the walls with macemen. Start digging a few tunnels. Finally, send in a few siege towers and send up your swordsmen.

The enemy still has a second and possibly third layer of defense. Use your macemen to kill all the defenders on the first wall.

Charge knights and pikemen to combat any foot troops attacking your troops. Ram their next wall, and then set s few siege towers and your remaining laddermen against the wall.
